Non-alcoholic Beer

In our Non-alcoholic Beer recipe, we create a copper version with floral and spicy notes. With our newly available Platinum Swaen© Dextrin and Chit malt. The base is set for great mouthfeel and foam retention.

Non-alcoholic, well balanced, 100% beer – NABLAB (Non-Alcoholic, Low-Alcoholic Beer) is “hot item” in the brewing industry. With increasing market share no brewer wants to stay behind. Yet, matching beer characteristics in a beverage without alcohol is tricky. You have to balance sweet, sour and bitter. Restrain the alcohol formation and keep up the mouthfeel. It is a challenge but with the right tools it becomes at least a bit easier. Maltsters with a brewer’s heart to your aid.


Grain bill

The grain bill for this Non-alcoholic Beer recipe is simple yet essential to the beer’s character. The core starts with Munich malt which will be supported by Dextrin and Chit. A subtle caramel addition will provide the right malt flavour and copper colour.

  • Mash in at 75°C (167ºF) and rest for 15 minutes.
  • Mash off at 82°C (180°F).

Hops

The hop character must be subtle and complementing the phenolic notes of the yeast.

  • Add the first at the start of boiling.
  • Add the last hops in the kettle while transferring to the whirlpool.

Fermentation at 20ºC (68ºF) for 72h, Crash cooling to 0ºC (32ºF). Remove the yeast as much as possible, mature during 1 week at 0ºC (32ºF).

Results

Round and full with floral hop aroma and flavour. This beer needs to ferment fast and be kept as cold as possible and under pressure afterwards. DO NOT referment in the bottle.

Appearance

This Non-alcoholic Beer recipe should provide a slightly hazy, copper beer with a creamy foam head.

Food pairing

In general, this Non-alcoholic Beer pairs with all dishes because of the balanced profile. The floral hop character makes it a great beer to be drank along side fish dishes. The caramel richness makes it a solid beer for any stew with sausages.
